Kesari bhaat


               Festival season is round the corner now! We all are in search of easy quick sweet dishes. Kesari bhaat or Yellow sweet rice (that's what my daughter calls it) is very simple yet flavourful sweet. When my mom used to make it I still remember the fragrance from the kitchen. 
                This is the most easy recipe I have ever tried. Just few spices like cloves, black pepper, cardamom and star ingredient Saffron, rice, ghee, sugar and water. That is it, least ingredients and most fragrant dish evahhhh ( that's how my gen Z Alpha says🤣)
Add ghee in a pot and add cloves black pepper and let ut splutter, now add rinsed and soaked rice. Drain water before adding rice to ghee, now saute rice gently till it feels dry, then add hot water and give it a stir, and add soaked saffron , again at this stage you can add food colour or I prefer turmaric for golden colour. My kids love dry fruits in kesari bhaat, so I add rasins and cashews here and Cover it to let the rice Cook. When rice ks 90 percent cooked then add cardamom powder, sugar & mix it. As sugar melts it will little watery but don't worry it gose away as cooking happens. Put the flame on lowest possible setting and let the sugar and rice thicken completely, stiring in between. Once the consistency looks good then turn the flame off and cover it for couple of minutes. Walah kesari bhaat is done!!! 
                Enjoy this sweet kesari bhaat at any occasion or without occasion... I like to make it when my sweet tooth peaks up and I am lazy to make something elaborated.
