Kachchhi Dabeli

          When I was in school my mom use to give me 5 bucks every Saturday. And I use to spend 3 bucks on Dabeli. The stall vendor is very old now. His stall is near my school and he still sells dabeli. He makes the best dabeli in the whole world. Last year I visited my school and dispite his age he still remember me and my entire batch. I just love dabeli made by him. When I visited him, he blessed me with his secret recipe of making dabeli.
           Dabeli literally means pressed, and kutchi means from Kutch region of gujarat. So the basically name itself telling about the region. Tangy, sweet, spicy potato stuffing is stuffed in pav (dinner rolls) with tamarind chutney and mint chutney. Then the pav is roasted on big iron tawa (griddle) with huge spoon of butter. Then it is decorated with masala sing (spiced coated peanut) or roasted peanuts, fresh pomogranet seeds, barik sev and served with lal (red) chutney and meethi (dates and tamarind) chutney. Dabeli is a flavour bomb. This dish is also known as Gujrati double roti or desi burger.
             Out side of gujrat this dish is popular in many states but this is can not be found abroad. The dish prepration takes time because it is made in 2 parts. Crispy Millet bhakri with brinjal curry.

             Summer is round the corner and this menu poped up in my mind. This is one of the special menu for me. Dharwadi bhakri, kala masla vangi bhaji, kairichi chatni. My neighbour auntie introduced this lip smacking crunchy flatbread to me. This flatbread is called Dharwadi bhakri, means crunchi millet flatbread which belongs to Bidar. Maharashtra and Karnataka border is called Bidar.                    Millet flatbreads are popular accross India. But this dharwadi bhakri is little different as it can be stored for months. Usually me & my daughter like this with special peanut chutney made in mortar and pestle with perticular type of peanuts called Solapuri peanut.                   Vangyachi bhaji is brinjal curry made with special spices paste which is dark in colour that's why it is called kala masala. Kala means black. Dry coconut, dried red chilli, garlic, onion, poopy seeds, sesame seeds are roasted on a flame, then kanda lasun masala with roasted spices
