Kulche Chole



           Everyone was giving two of us very weird look because at a very beautiful and cheap shopping place instead of shopping me and my friend were hoping on the food stalls on my collage trip to Rajasthan. But when we found a man who had fix a huge brass pot to his bicycle and was roasting some kind of flat bread, we couldn't hold ourselves. I remember we had 6 plates of chole Kulche. I bought 2 plates and forcefully tell everyone to have it. That night we reached our hotel 2 hours late because after having a bite everyone was busy enjoying this simple yet flavourful street food.
        
           Chole kulche is most popular breakfast or snack dish in Northern India. Especially in Delhi and Punjab. It is so heavy that this can be a meal as well. You will not find those hot beauty out of north India.

          Kulcha is a type of leavened bread eaten in India and Pakistan, made from maida (All purpose flour). It is particularly popular in India and Pakistan, and is usually eaten with chole. Chole is used are yellow dried peas or chickpeas or combination of both, soaked overnight then boild to mushy texture. Then they mix with chopped onions, tomatoes, cilantro, green chilli and spices like red chilli powder, Coriander seed powder, cumin seeds powder, amchur powder (dried mango powder) salt and at the end they squeeze fresh lemon that takes this dish to next lavel. Then they roast kulcha on iron griddle with lots of butter. 

          Kulcha is a typical Punjabi recipe. Amritsar, a city in Punjab is famous for its Amritsari kulchas or Amritsari naan. This kulchas are made 'without yeast' and after roasting it is rubbed with 'butter or ghee'. Kulchas are made with Cilantro or kasuri methi.

            Many Indian or pakistani restaurants serve kulcha but may be not chole. I have never seen chole kulche in any restaurant just kulche are the part of menu. The chole made with Chickpeas are not the chole for this dish. Chole is a indian curry as well eaten with puri or naan or rice.

                      Mirchi ke Tipore, basically less spicy green pepper's side dish. This is one of the most favorite side dish even my 6 year old loves a lot.
