Paav Bhaji



          Paav bhaji is my personal all time favorite. After a movie with my family my father always use to take to famous pav bhaji joint at my home town. As a child I was not able to handle the spice lavel but with tears in my eyes and water glass by the plate I use to enjoy this dish most. Till now Whenever I visit my hometown me and my dad go to enjoy pav bhaji.
          
          It is an Indian fast food dish. Pav is dinner roll served with thick gravy. Alongside raw onion and lemon wedges. Now days raita too.

The dish originated in the 1850s as a fast lunchtime dish for textile mill workers in Mumbai. Pav bhaji was later served at restaurants throughout the city. Pav bhaji is now offered at outlets from simple hand carts to formal restaurants in India and abroad.

           Bhaji is made with potato, cauliflower, fresh green peas, capsicum, tomato and onions.  The spice mix is prepared differently called pav bhaji masala. Stall owners boil all the vegetables together then they make little hill on a big griddle to keep it hot and handy for them. as per order they prepare bhaji. This dish is loaded with butter. The pav is roasted on same griddle after bhaji is made so the spicy taste gets absorbed by pav too. And that makes the dish more tasty.

          The base of the bhaji is potato and some of the foodies tried to replace it. And I am not surprised this variations of the bhaji are also a hit. Like Paener Pav bhaji made with cottage cheese or Jain pav bhaji is made with raw banana and with out onion and garlic. Because Jainism doesn't allow to eat root vegetables. Jain pav bhaji is also mild in spices, so if you can not handle up leveled spicy pav bhaji then try this jain pav bhaji. Now days you can customize the spice level but trust me don't. Spicy food is made to be enjoy like that only.

         Do try this dish if you get chance to eat at Indian restaurant or if your city doesn't own one then you can try this dish at home. Pav bhaji masala (spice mix powder) is easily available at any Indian or Asian stores as well. so you can try this dish at home with lbasic ingredients.

Crispy Millet bhakri with brinjal curry.

             Summer is round the corner and this menu poped up in my mind. This is one of the special menu for me. Dharwadi bhakri, kala masla vangi bhaji, kairichi chatni. My neighbour auntie introduced this lip smacking crunchy flatbread to me. This flatbread is called Dharwadi bhakri, means crunchi millet flatbread which belongs to Bidar. Maharashtra and Karnataka border is called Bidar.                    Millet flatbreads are popular accross India. But this dharwadi bhakri is little different as it can be stored for months. Usually me & my daughter like this with special peanut chutney made in mortar and pestle with perticular type of peanuts called Solapuri peanut.                   Vangyachi bhaji is brinjal curry made with special spices paste which is dark in colour that's why it is called kala masala. Kala means black. Dry coconut, dried red chilli, garlic, onion, poopy seeds, sesame seeds are roasted on a flame, then kanda lasun masala with roasted spices
