Daal Tadka & Jeera Rice

            Jeera rice and Dal tadka is comfort food for me. Whenever we kids (when i was little) demand varity in rice to my mom use to prepare jeera rice and dal tadka quickly.
           
            Jeera or zeera is cumin in hindi. This simple everyday rice dish prepared in north India and Pakistan. Just cumin seeds make a huge difference in taste. Although onion and cilantro are also used in preparation but without it too jeera rice tastes yumm. Jeera rice amd Dal tarka is deadly combination but jeera rice is also can be enjoyed with any greavy or even with raita.
            
            Dal tadka means tempered lentils. The tadka is prepared in ghee with very few but special spices, onions, ginger and garlic, curry leaves, cilantro, dried red chilli papper. Served alsong with onion slices and lemon wedges. what is so special and different about this dal is, it is tempored two time while preparing and before serving. The lentils are used in this is super comman in Indian kitchen that is toor dal and yellow moong dal. sometimes as per region base lentils might change. Some parts use arhar dal, masoor dal or some other combination dal as well. Allover India this dal tadka is popular because it's simplicity. Every single Indian restaurant even at abroad has this simple yet beautiful dal tadka in their menu. Dal tadka tastes more special at dhaba ( restaurants at highway which are open late night for night travelers or truck drivers at India called dhaba). They use charcoal fireplace to cook food. Charcoal gives this dish burnt charcoal taste that makes it more special.

           So if you are at Indian restaurant and want to eat something comfortable but flavourful then give jeera rice and dal tadka a shot, I bet you will fall in love with it's simplicity.

Crispy Millet bhakri with brinjal curry.

             Summer is round the corner and this menu poped up in my mind. This is one of the special menu for me. Dharwadi bhakri, kala masla vangi bhaji, kairichi chatni. My neighbour auntie introduced this lip smacking crunchy flatbread to me. This flatbread is called Dharwadi bhakri, means crunchi millet flatbread which belongs to Bidar. Maharashtra and Karnataka border is called Bidar.                    Millet flatbreads are popular accross India. But this dharwadi bhakri is little different as it can be stored for months. Usually me & my daughter like this with special peanut chutney made in mortar and pestle with perticular type of peanuts called Solapuri peanut.                   Vangyachi bhaji is brinjal curry made with special spices paste which is dark in colour that's why it is called kala masala. Kala means black. Dry coconut, dried red chilli, garlic, onion, poopy seeds, sesame seeds are roasted on a flame, then kanda lasun masala with roasted spices
