I was unaware about this big and weird looking Yum category root Superfood called Suran. I came to know about Suran when we moved to India. Mumbai city is so welcoming that it accommodates all the people , food & culture who even visit here. Specially food.. I have never seen such a big vegetable market available with all kind of verity national and international too. There I met Suran and as people are so kind hearted & talkative here one vegetable vendor told me about the recipe and benefits of suran. As I am little experimental 😁so I bought it and end up eating all the suran curry by my self😂🤣.. But I am stubborn so I decided to try it again till my family accepts it.. I started searching for more ways to cook it. And I came to know this amazing recipe called "Suranache Kaap" again from vegetable vendor only❤️. And finally my family specially my older child (My Husband😉) approved this wild and weird looking Suran. So yes I won as always💃.
Later my friend's MIL told me many people use suran as substitute of meat. Suran is a very good alternative for mock meat and even it tastes like fish. Here In india for four months call "chatrumas" majority Hindu people don't consume meat, fish and poultry products sometimes not even leafy vegetables. That time suran hits its peak as season begins. And without breaking any rule people sastisfy their buds with meaty taste of suran.

I was so exited writing about me and Suran I forgot to mention about Kaap recipe. Definitely not writing a recipe but i love to write about ingredients. So this tangy, crispy and flavorful dish made with medium thick slices of suran. This chips first submerged in to water then pat dry it. After that a good rub of turmeric powder and leave that to get dry. now they prepare outer covering with Rawa (semolina), salt, black pepper, red chili powder, lemon juice, rice flour, finely chopped coriander, green chili & garlic. Mostly green chili and garlic are optional. now sliced suran will coated with dry semolina mixture. Then it will go to shallow fry on a slow flame until golden brown. That's it minimum ingredients and good amount of patience makes Suranache kaap.
One quality in suran is it cooks really fast. And requires less oil.
This is such a versatile ingredient that it can cooked as curry, chutney and can be used it as stuffing too. Suran is Asian yum, you may see this serving in to India, Pakistan, and other Asian and east Asian countries.

Suran is not just a vegetable, it has medicinal properties too. Suran is great to consume for PCOD & PCOS patients. It is good to consume at least once a week. And if someone hitting puberty so you should offer this super lovely suran to them. suran has anti oxidents. So good to clean your body. This all is mentioned not only in Ayurveda but you can find this in Unani and Siddha practice too.
My kids also love Suran Fries. Easy to make and loved by all age group. Just a precaution when cutting suran apply any edible oil to hand otherwise it may give you itching. And always use turmeric powder with suran so it won't itch your throat.

And in India just make sure you ask when you visit nearby vegetable market. you have to make it at home or you know the trick.. ask any Asian or east Asian friend to make it for you! you won't find this vegetable in any restaurant menu.
