Mirchi Bada


                  Mirchi Bada, name itself describes the taste. Spicy but Tangy & piping hot mirchi bada is a next level satisfaction! This Dish is form "Rangeelo Rajsthan". The most colorful as well Royal state of India. I visited Rajasthan with my Family. I remember we were travelling in a tightly packed bus and me and my cousin were starving. We demanded uncle that we want something to eat and with lightning speed like a superman my uncle made out of the bus on a stop. He found only Mirchi bada as there was only one small vendor selling it. weather was burning hot and piping hot bada in our hands. That taste was AMAZING!!! I never had same mirchi bada ever. After that I went to Rajasthan couple of times but every vendor's taste is different but definitely unique. Today I tried to recreate the taste.

                    Mirchi Bada means deep fried stuffed green chili pepper. Fresh green chili pepper used in this dish is special verity of chili pepper called "Bhavnagari Mirch". This chili pepper is little big in size and medium spicy like Jalapeño. Some prefer to stuff chili pepper and some prefer to stick the stuffing around chili pepper. Stuffing is made out of boiled potato and several spices like, Amchoor powder (dried raw mango powder), red chili powder, salt, turmeric powder, Anardana (dried pomegranate seeds), Coriander seeds powder, Cumin seeds powder, mix all ingredients with potato and stuffing is ready. Now they slit green chili peppers in middle and stuff this stuffing and dip in a besan ghol (chickpea batter) and goes straight in hot oil for deep fry. Many vendors serve Bada with Green chutney & imli ki chutney. Green chutney is spicy and Imli ki chutney is made with tamarind & jaggry so it is tangy and sweet.

                Rajasthan!!! A land of different cultures and brave hero Kings and Queens. Rajasthan!!! Where Rajupti, Marwari and Mughlai cuisine serves in same plate. When we talk about Rajasthan, Spicy, tangy but heavy dishes dances in your thoughts. Already the weather of Rajasthan is hottest and it is a dessert then why people prefer eat so spicy and hot food here? Chili and spices helps to blood thinning process and also cleans blood. See how smart were Indian chefs! Everything was around health and according to weather. Indian Food also has focus of what the area produces.

                      little more about smartness of Indian chefs. Now days Disposable serving bowl has taken place from traditional bowls. Traditionally this bowl was made of  Bastard teak (AKA Parrot tree, Butea gum and Sacred tree). Eating from those bowls helps guts to digest heavy food, plus it was ecofriendly. Personally I love to eat from those bowls and plates. Now it is so rare to find this plate made out of leaves. Today I remembered about those when I was sharing stories with my kids so mentioning it here too.

                    So next time you visit Rajasthan dare to try that Lovely Mirchi bada. You may find this in Rajasthani or Marwari restaurant too.. Crispy Millet bhakri with brinjal curry.

             Summer is round the corner and this menu poped up in my mind. This is one of the special menu for me. Dharwadi bhakri, kala masla vangi bhaji, kairichi chatni. My neighbour auntie introduced this lip smacking crunchy flatbread to me. This flatbread is called Dharwadi bhakri, means crunchi millet flatbread which belongs to Bidar. Maharashtra and Karnataka border is called Bidar.                    Millet flatbreads are popular accross India. But this dharwadi bhakri is little different as it can be stored for months. Usually me & my daughter like this with special peanut chutney made in mortar and pestle with perticular type of peanuts called Solapuri peanut.                   Vangyachi bhaji is brinjal curry made with special spices paste which is dark in colour that's why it is called kala masala. Kala means black. Dry coconut, dried red chilli, garlic, onion, poopy seeds, sesame seeds are roasted on a flame, then kanda lasun masala with roasted spices
