Khapli Gavhachi Kheer

               


                 Khapli gahu chi kheer is made specially for my son who was allergic to dairy! My family have a massive sweet tooth. But due to dairy my son couldn't enjoy most of the indian sweets. So my Aunt came up one day with this dish and feed him. He was so gourmand after eating first spoon of it. And it became his on go favourite sweet dish which he can enjoy. I too had it first time and fell in love with it's simplicity.

              Khapli gahu is long graind special type of wheat also know as Emmar wheat. Wich is very low in gluten, high in fibre, as well significant source of proteins, minerals, lipids, iron, dietary fibre thiamine, and several vitamins. These are vital for a healthy body. Later I came to know khapli wheat is the most nutritious type of wheat and believe to be original form of wheat. Adding khapli gahu in a daily diet can help you to loose weight. It improves your digestion. Its best for diabetic patients to control sugar levels as it ilhas low glycemic index. It gives you so much energy in a day and can be given to pregnant women & babies in a porridge form with or without milk.

                 Process is time consuming but very very easy to make that too minimum ingredients. First of all Soak khapli wheat for an hour or half hour. Take it out of water and dry for 15 minutes under the fan on a clean muslin cloth. After that rub wheat gently and side the peals. Add whaet in a grinder jar. Pulse for couple of time. We don't want to make powder oit of it. So make sure you keep checking on it. We need the broken wheat texture. Now add ghee in pressure cooker and roast ground khapli wheat & roast till it changes it colour and become aromatic. Now add boiling water in to roasted wheat. Add some desiccated or sliced coconut some dry fruits of your choice and close the lid. Let it cook on a high flame for 6-7 minutes. After that low tye flame and keep it for good 13-15 minutes. Once the it cools down open it and add jaggery as per your taste. And let it cook again until jaggery melts and kheer becomes thik again. Don't forget to steer in between. Once kheer is ready take couple of spoons in a bowl add melted cow ghee and enjoy. Some like to add warm milk just to adjust desired consistency. Milk is completely optional. But don't skip ghee.

                   Khapli ghau chi kheer falls under Satvic and vegan food group. This is the perfect combination of healthy and blissful food experience.

                   Again this is definitely a non restaurant dish. So please try to make this at home and build your health with relishing food in your plate. Khapli wheat is not available in any Indian grocery store out of India but you can easily find it online like Amazon.com or try some Indian sites who deliver out of India.              Complete menu of the day! Dharwadi Jwari bhakri, kala masala vangi in the middle kairi chutney (raw mango chutney) on the right of bhakri. Mango pickle on the left of bhakri and raw onion. And offcourse star of the day in both side in bowl Khapli Ghavachi kheer!!!

                      Mirchi ke Tipore, basically less spicy green pepper's side dish. This is one of the most favorite side dish even my 6 year old loves a lot. So you can guess the hotness of the peppers.                         This dish I came across when I was scrolling through some random videos. Name itself is so catchy so I started my search.
