Undalkal

         

   Undalkal is very old traditional dish from Konkan region of Maharashtra and it means super crispy rice flour balls.  I make this dish for my kids whenever they want to eat something like street food but  I want them to eat healthy. So Undalkal is a mid way for us. Everyone like this dish at my home. specilly me because it takes less time to prepare and satisfy your "demanding" taste buds deeply.

              Undalkal is a crazy crispy dish packed with flavors as well health. Spicy and very easy to make quick dish Undalkal takes just minutes to be ready. This crispy bombs needs minimum ingredients. Rice flour, oil, cumin seeds, turmeric, red chili powder or green chili, salt and water that's it. This are basic ingredients to make Undalkal. Now some like to add curry leaves, cilantro, chaat masla. Equal amount of water and rice flour are cooked together, this process called 'ukad kadhne'. Turmeric powder and salt are added while cooking rice flour. Then warm dough is kneaded together to form small balls. Then this fried balls are seasoned with red chili powder and little more salt. Some even like to add curry leaves, chaat masala, cilantro.Traditionally undalkal is deep fried but I like shallow fried undalkal more.

            Undalkal can be sweet also. They taste like Ukadiche modak. Perfect combination of jaggry and rice flour tastes heavenly. Freshly grated coconut takes it to next level. 

               This is a perfect dish for kids and elders as well because rice flour is so easy to digest and minimum seasoning makes it better. You even can skip chilies if you don't like it. seasoning can be modified as per your taste. Hot cup of 'Adrak wali chai' makes it perfect evening snack. Heavy rain fall and hot kadak chai with crispy undalkal is a deadly combination.

               This is totally non restaurant dish. You won't find this dish ever in any restaurant. But it is so easy to prepare that you can make it at home easily. Follow Madhura's recipe for perfect Undalkal. Rice flour is a part of most of the cuisine, so it is easy to find in any grocery store or else Indian groceries store Zindabad!!! Crispy Millet bhakri with brinjal curry.

             Summer is round the corner and this menu poped up in my mind. This is one of the special menu for me. Dharwadi bhakri, kala masla vangi bhaji, kairichi chatni. My neighbour auntie introduced this lip smacking crunchy flatbread to me. This flatbread is called Dharwadi bhakri, means crunchi millet flatbread which belongs to Bidar. Maharashtra and Karnataka border is called Bidar.                    Millet flatbreads are popular accross India. But this dharwadi bhakri is little different as it can be stored for months. Usually me & my daughter like this with special peanut chutney made in mortar and pestle with perticular type of peanuts called Solapuri peanut.                   Vangyachi bhaji is brinjal curry made with special spices paste which is dark in colour that's why it is called kala masala. Kala means black. Dry coconut, dried red chilli, garlic, onion, poopy seeds, sesame seeds are roasted on a flame, then kanda lasun masala with roasted spices
