Lapsi aur Kadhi Chawal

Navratri is the festival of small girls. On the eighth day or nineth day of navratri ladies dose puja (worship) of goddess Durga. Eight handed Durga maa battled without eating and sleeping against hundreds of demons as well as buffello headed demon called Mahishasur for nine nights and ten days without any break. So to celebrate this days and to thank to maa Durga we call minimum eight little girls and worship them. we treat them as Maa Durga and offer prashad (food offerings to god is called prashad) to those little girls who are form of maa Durga in navratri. Most of the ladies and girls keep fast during navratri. So on the last day when ladies break there fast lapsi, kadhi chawal are very easy to digest and gives complete nutrition.

Lapsi is a simple delicacy from the Royal Rajasthan. Lapsi is made by cracked wheat also known as lapsi rawa, fada or kansar. Lapsi rawa is cooked with sugar or jaggry. Lapsi rawa is made with special technics hence it is available in market. We don't make rawa at home. It is a very simple and non complicated recipe. it is usually cooked in open pot or can be cooked in pressure cooker as well. Firstly they roast lapsi rawa in ghee and then hot water added in roasted rawa. When rawa is soft to touch choice of sweetener is been added like, sugar or jaggry. then again for couple of minutes let it be cooked on low flame then vollah !!! lapsi is ready.

Kadhi is made with curd (yogurt) and besan (chickpea flour). Curd is preferred little sour then gradually they add besan and give it tadka with fenugreek seeds, cumin seeds, mustard seeds, hing (asafoetida), curry leaves and chopped green chili or dried red chili. On some special occasions some like to add soaked  split chickpeas or sprouted moth beans. Sometimes we add grated ginger as well but not in festival menu. because due to religious reasons roots are not allow to consume on festival menu. Most of the north Indian festivals are incomplete without kadhi chawal. North is popular for wheat. Making rice is not daily dish, so North India usually prefer wheat made dishes. But on every festival Indian meal is incomplete without rice.

Chawal is rice. the choice of rice is been cooked with little salt and ghee. Rice can be cooked in open pot or can be done in pressure cooker as well. now days electric rice cooks are also available. and electric rice cooker are perfect to cook nice each grain separated rice what we call it "khile khile chawal". If you are newbie to cook and every rice attempt is failing each single time then try rice cooker but make sure that you don't open lid in between out of curiosity. Older rice is more aromatic and easy to cook rather new rice. Ambemohor or indrayani are very tasty and aromatic varity of rice. Each type of rice has its own taste. If you live out of India then you can try Royal basmati or Jasmine rice from sam's club to eat regularly it is better in taste and fail proof.

Lapsi and kadhi chawal is sattvic dish. Sattvic food is for yogic practice and it helps to balance sattva guna in you. It is easy as well as fast to digest and won't give any discomfort to your body. All the requirements of satvic food is completed in this combination. This is ginger, garlic, onion free dish and it has good amount of ghee and complete meal in itself. It has grains as well as dairy is included. So if you ever looking for a sattvic dish or combination, Then there is no other better option for you to try.

how to eat Lapsi and kadhi chawal. you can either mix three together or eat laspi separately and mix kadhi chawal to enjoy the goodness. But the when you Mix lapsi and kadhi chawal together it gives nice sweet and sour taste to relish.

Now monsoon is going on and it is perfect dish to enjoy in romantic cozy rain or chilling winter. Warm kadhi in cold weather makes us to melt in cozy bed or sofa. Kadhi can be offered in cold and fever as well. It gives our taste buds a party after that nasty antibiotic medicines. Varan Fal

papad               This lockdown blessed me a long stay at my hometown. Beautiful childhood memories, simple homemade food and long chat with neighbours who are family now! My neighbour Aunt cooks amazing food. When I was child I used to play knowingly in front of her house every evening hoping she would call me inside and feed me that aromatic, mouthwatering dish whatever she has made for dinner. And this trick worked always.. 😉                Varan fal is one of the comfort dish I always adore. This is something special because every house has it's own version of Varan fal. Today my Aunt made varan fal for me, so how can I forgot this dish to share with you!              Basic preparations are same in each recipe, just spices or the way of making is varies. My Aunt makes it with mix lentils like toor dal (pigeon pea), chana dal ( Split chickpea), moong dal ( yellow split mung) Urad dal ( Split black gram) are pressure cooked together with turmeric and salt calld var

Crispy Millet bhakri with brinjal curry.

Summer is round the corner and this menu poped up in my mind. This is one of the special menu for me. Dharwadi bhakri, kala masla vangi bhaji, kairichi chatni. My neighbour auntie introduced this lip smacking crunchy flatbread to me. This flatbread is called Dharwadi bhakri, means crunchi millet flatbread which belongs to Bidar. Maharashtra and Karnataka border is called Bidar.                    Millet flatbreads are popular accross India. But this dharwadi bhakri is little different as it can be stored for months. Usually me & my daughter like this with special peanut chutney made in mortar and pestle with perticular type of peanuts called Solapuri peanut.                   Vangyachi bhaji is brinjal curry made with special spices paste which is dark in colour that's why it is called kala masala. Kala means black. Dry coconut, dried red chilli, garlic, onion, poopy seeds, sesame seeds are roasted on a flame, then kanda lasun masala with roasted spices
