Dal Bati

                         

               I grew up eating Dal Bati. This is the festive menu we enjoy on festivals or on some special occasions. I am blessed with big fat family. I remember my mother used to make dal bati for 50-60 member.

                       Dal bati is main course meal. Dal means lentils. And Bati means hard wheat rolls. Dal is prepared with combination of 6 - 7 dal with minimal ingredients. Or only tuvar dal is used. Combination of dal is prepaed with garlic, curry leaves, red chilli powder and asafoetida and it tastes spicy. Where as tuvar dal is prepared with tamarind pulp, curry leaves, garam masala, asafoetida, red chilli powder, and jaggry and it tastes tangy, sweet and spicy. Bati is prepared with coarse wheat flour. This bati is baked in Indian clay oven. Once bati are out of oven then it is break and submerged in ghee, let them soaked in for while. Dal bati is a messy food. When dal bati is served they take bati directly out of ghee and put it on plate then it piping hot dal is poured on bati. Bati is usually enjoyed as lunch menu. Thinly sliced onions and lemon wedges served along with it. Piping hot dal bati swimming in ghee and fresh lemon squeezed on top of it. Though dal bati is messy but trust me it is finger licking.

                        Dal bati is popular across India but it is mainly eaten in Rajasthan, some parts of Maharshtra like Khandesh and vidarbha, Uttar pradesh, and Bihar. Every state has it's own take on Dal bati. But the love for ghee submerged dal bati is same. Now days bati can be prepared on stove top in special bati oven. 

                         In India some restaurants gives complete Rajsthani feel right from attire of waiters to look and ambiance of place. one of the popular name is Choki dhani. But out of India you won't find this royal dish. If you are visiting India then make sure you won't miss this royal Dal bati . Crispy Millet bhakri with brinjal curry.

             Summer is round the corner and this menu poped up in my mind. This is one of the special menu for me. Dharwadi bhakri, kala masla vangi bhaji, kairichi chatni. My neighbour auntie introduced this lip smacking crunchy flatbread to me. This flatbread is called Dharwadi bhakri, means crunchi millet flatbread which belongs to Bidar. Maharashtra and Karnataka border is called Bidar.                    Millet flatbreads are popular accross India. But this dharwadi bhakri is little different as it can be stored for months. Usually me & my daughter like this with special peanut chutney made in mortar and pestle with perticular type of peanuts called Solapuri peanut.                   Vangyachi bhaji is brinjal curry made with special spices paste which is dark in colour that's why it is called kala masala. Kala means black. Dry coconut, dried red chilli, garlic, onion, poopy seeds, sesame seeds are roasted on a flame, then kanda lasun masala with roasted spices
