Baigan Bharta Bhakri


Bhakri and Baingan bharta (mashed eggplant /Brinjol) is deadly combination. Baingan bharta is popular in Gujrat and some parts of Maharashtra. Bhakri is a indian flat bread. it is made with Bajri, jowar, rice, ragi and mix grains. Bajri (pearl millet) and Jowar ( sorghum) are widly use in different parts of india. If you are looking for gluten free indian breads then you are at a right place. Jowar and bajra are gluten free so it is way more healthier than any other flat bread. 
There are verity of eggplants but for bharta 2 of the types are most common. They are big and usually green or violet in colour. Both eggplants are slightly different in taste. They are roasted on stove top on a low heat or in a chulha (indian stove or you can just imagine grill made with clay). Another favourite side dish is Mirchi thecha. Mirchi thecha is made with just fresh green chillies or peppers and garlic with salt to taste. Everything is roasted and crushed in a mortar and pestle. Some add peanuts to cut down the hot taste of chilli. If you can handle the heat and want to taste the most hot dish thenirchi thecha is perfect for you. And the last and important dish no actually it is drink, Chaas or taak (Buttermilk). It works as antacids because it contains cumin seed powder, black salt , rock salt amd curds. Hot Green chilly chutney spicy baingan bharata all this may give you heartburn, so Indian cuisine already took care of it with Buttermilk. Buttermilk completes every meal. ao now onwards whenever you have heavy Indian meal don't forget this beauty to help your digestive system.

Crispy Millet bhakri with brinjal curry.

             Summer is round the corner and this menu poped up in my mind. This is one of the special menu for me. Dharwadi bhakri, kala masla vangi bhaji, kairichi chatni. My neighbour auntie introduced this lip smacking crunchy flatbread to me. This flatbread is called Dharwadi bhakri, means crunchi millet flatbread which belongs to Bidar. Maharashtra and Karnataka border is called Bidar.                    Millet flatbreads are popular accross India. But this dharwadi bhakri is little different as it can be stored for months. Usually me & my daughter like this with special peanut chutney made in mortar and pestle with perticular type of peanuts called Solapuri peanut.                   Vangyachi bhaji is brinjal curry made with special spices paste which is dark in colour that's why it is called kala masala. Kala means black. Dry coconut, dried red chilli, garlic, onion, poopy seeds, sesame seeds are roasted on a flame, then kanda lasun masala with roasted spices
