Zafrani Pulao




I still remember the beautiful aroma from of Zafrani pulao from my neighbor family use to make during Eid. When I was a kid I couldn't wait to wish them Eid mubarak because once we wish them, Nazma Auntie use to share the pulao and sheer khurma. I still demand zafrani pulao from her whenever I visit my father's home and I must say I am so lucky that I receive such love from her in form of zafrani pulao. Being an Indian I am fortunate to celebrated diwali and Eid at the same time. 

           Zafrani pulao is simple rice delicacy from Kashmir and north side of India. This aromatic flavorful yet simple dish is served during the festive time. Zafrani pulao is also spreads it's aroma from Bangladesh, Pakistan and middle east.

          Zafrani pulav is literally means Saffron rice. This rice made with Basmati rice or joha rice, along with aromatic and flavorful spices like saffron obviously, Bay leafs, cardamom, melon seeds, raisins, almonds, cashews, and ghee. The dish sounds simple but it takes a skill to make perfectly cooked rice. Each grain is separated from each other, non sticky rice. This is sweet and almost non spicy dish to be enjoyed alone. 

          You may get to enjoy this pulao at fine dines or five star restaurants or local restaurants back here at India but home made pulao that too during Eid makes lots of difference. So if you receive invitation for Eftar party then don't dare to miss that you may get a golden chance to relish on this aromatic hidden dish.

Crispy Millet bhakri with brinjal curry.

             Summer is round the corner and this menu poped up in my mind. This is one of the special menu for me. Dharwadi bhakri, kala masla vangi bhaji, kairichi chatni. My neighbour auntie introduced this lip smacking crunchy flatbread to me. This flatbread is called Dharwadi bhakri, means crunchi millet flatbread which belongs to Bidar. Maharashtra and Karnataka border is called Bidar.                    Millet flatbreads are popular accross India. But this dharwadi bhakri is little different as it can be stored for months. Usually me & my daughter like this with special peanut chutney made in mortar and pestle with perticular type of peanuts called Solapuri peanut.                   Vangyachi bhaji is brinjal curry made with special spices paste which is dark in colour that's why it is called kala masala. Kala means black. Dry coconut, dried red chilli, garlic, onion, poopy seeds, sesame seeds are roasted on a flame, then kanda lasun masala with roasted spices
