Pani Puri








             Pani puri is my most favorite street food and it is near to my heart. This is my golden memories with my all friends. I remember me and my best friend used to compete that how many plates can one eat and the one who wins will pay. We always used to forget about winner and become so full that we couldn't finish our meal at home. and our moms would find out easily that we ate out .. after that we were forced to listen the long lecture from our beloved mothers jokes apart, but every Indian loves Pani puri. there is no such time to enjoy this tangy, spicy beauty.

            India wide this dish is known by different names like Puchka, phulki, pani patase, golgappa, but the love for this dish is the same. Pani means literally water and puri means ball. Puri is outer cover made with all purpose flour (maida) or wheat flour or suji (semolina), There are two types of water are served along with crunchy puri and different stuffing as per region. One is meetha pani means sweet pani made with tamarind and dates. other is super spicy tikha pani made with mint, coriander (cilantro), green chili (thai green pepper), dried spices like rock salt, black salt, coriander and cumin powder, amchur powder(dried mango powder) etc. The stuffing is crew behind camera, made with potato, onion, kala chana (black chickpea). Different region prefer different stuffing like Mumbai stalls will put piping hot Ragda made with dried peas as stuffing and sometimes this puri will dance with sprouts in your mouth. In summer time some stalls offer cold pani puri. Some add ice to keep it cold and some serve from earthen pot called matka.

      sukha puri means dry puri. This is most important and end part of this dish. This puri served with only stuffing, barik sev and chaat masla on it. Never forget sukha puri at the end
         
        Now days from five star restaurants to roadside stalls do serves pani puri but if you want to enjoy the authentic taste then please hit roadside stalls for it. May be look for who make water with mineral water. Other than Tikha and meetha pani lots of flavored water are invented by foodies, like chocolate pani puri, jaljeera, pudina, pachak, garlic, hing, flavor from fruits etc. But first do try the traditional one first then you are free to explore the tastes and I bet you will like the original taste the most.

Crispy Millet bhakri with brinjal curry.

             Summer is round the corner and this menu poped up in my mind. This is one of the special menu for me. Dharwadi bhakri, kala masla vangi bhaji, kairichi chatni. My neighbour auntie introduced this lip smacking crunchy flatbread to me. This flatbread is called Dharwadi bhakri, means crunchi millet flatbread which belongs to Bidar. Maharashtra and Karnataka border is called Bidar.                    Millet flatbreads are popular accross India. But this dharwadi bhakri is little different as it can be stored for months. Usually me & my daughter like this with special peanut chutney made in mortar and pestle with perticular type of peanuts called Solapuri peanut.                   Vangyachi bhaji is brinjal curry made with special spices paste which is dark in colour that's why it is called kala masala. Kala means black. Dry coconut, dried red chilli, garlic, onion, poopy seeds, sesame seeds are roasted on a flame, then kanda lasun masala with roasted spices
